How to Make Cheesy Crock Pot Chicken and Noodles
On days when I know I will need a win for dinner, I pull out this recipe. This cheesy, creamy, chicken dish hits the spot for everyone around my table. No one complains, and the crock pot is cleaned when dinner is done.

Can you use frozen chicken?
You can use frozen chicken for this recipe. It’s best if you lay your chicken out of the freezer the night before to thaw, then cook it in the crock pot the next morning. If you forget to thaw your chicken the night before, you can cook it in the crock pot frozen, but you will need to add some additional cook time.
Can I use canned chicken?
If all else fails, you can use canned chicken for this recipe, but you will also need to use canned chicken broth. When you cook the chicken in the crockpot, the cooking process produces the broth you need for the recipe.
After about six hours of cooking on low (this time is approximate and will differ slightly depending on your slow cooker) remove the chicken from the crockpot. If you used bone in chicken, it should fall off the bone easily. If you used boneless, it should shred easily with a fork.
What kind of noodles?
When you are about 30 minutes from ready to serve your dinner, cook the egg noodles on the stove. I usually cook these exactly by the instructions. Remember, you will have to stir the egg noodles into the chicken mixture to complete the recipe. If they are overcooked, they will fall apart when you stir them in.
Can I use a different kind of noodles?
You can really use any kind of pasta for this recipe. My family just prefers the texture of the egg noodles. However, there have been times when I didn’t realize I was out of egg noodles until the last minute and substituted either elbows or even spaghetti noodles and both worked well.
While the egg noodles are cooking, remove the chicken from the crock pot. It should be super tender after cooking on low for about six hours and should be easy to shred with a fork.
Next, mix the the cream of chicken soup and the chicken broth in the crockpot. I also like to mix in the salt and pepper at this point. It seems to flavor the dish more evenly if it is added at this point.
What do I do with the extra chicken broth?
The extra chicken broth can be used to cook the pasta. It gives the pasta a flavorful chicken taste. The chicken broth can also be froze for other recipes like Thanksgiving Cornbread Dressing.
What kind of cheese do I use?
Once your noodles are mixed into the chicken soup and broth mixture, stir in 1.5 cups mild cheddar cheese. After the cheese is stirred in, to the dish with the remainder of the cheese. You absolutely could use another kind of cheese. I have even used a mexican mix and it tasted great.
