When the weather gets colder, my once-a-month cooking menu begins to shift toward hearty soups that can simmer all day in the crock pot. One of my favorites is this easy white chicken chili recipe. In fact, chili is part of a family tradition. When the forecast calls for snow, we defrost a bag of our favorite family chili or this white chicken chili, and make sure we have on hand all of the ingredients for snow cream and our favorite slow cooker hot chocolate.
In fact, when I make white chicken chili, I use my large 47 quart stock pot and make enough for the entire winter. Then I have plenty to share with families who need a warm meal delivered.
White Chicken Chili Recipe
White Chicken Chili
Delicious white bean and chicken chili can be prepared on the stove top or in the slow cooker. Make in bulk and freeze!
- 1 lb Great Northern Beans cooked or canned
- 2 lbs Chicken breast cooked and shredded or canned
- 1 tsp Cumin
- 1 tsp Garlic Powder
- 1 Can Rotel
- 20 oz Chicken Broth
- 1 small Onion
Add all ingredients to stove top and simmer over low heat for 30 minutes
If you cook your own chicken, reserve broth for recipe.
Serve over tortilla chips with sour cream.
Cook chicken in crock pot the day before for easy shredding.
Reserve broth from chicken for recipe.
Cook great northern beans on stove top or in crock pot the day of and add other ingredients 30 minutes before serving.
