Easy Crockpot Salsa Chicken

This super easy Crockpot Salsa Chicken recipe will have a delicious dinner on your table in minutes.  The recipe makes a great addition to a ketogenic or clean eating menu plan.  

This easy #crockpot meal will surely be a family staple. Add this one to your meal plan or list of chicken recipes.

Meals that make it onto my regular menu plan have to be freezer friendly and easy to prepare in bulk.  They also need to be one pan or crockpot meals that I can that require very little time to prepare on the day I serve them.  Ideally, the recipe can also be incorporated into a ketogenic diet.  This delicious salsa chicken recipe meets all of those requirements.  In fact, it is so simple, I hesitate to call it a recipe.

Crockpot Salsa Chicken Recipe

Ingredients

3 lbs boneless skinless chicken breasts

32 oz Organic Salsa (mild or medium)

Note:  You can purchase organic ingredients to make this a clean eating recipe, or you can save money and purchase non organic.

Instructions:

Place chicken breasts in 7 quart crockpot and cover with salsa.  Cook on low for 6 hours.  After cooking on low, chicken breasts will shred easily with a fork in the crock pot.  Shred chicken thoroughly and stir together with salsa.  Serve over rice.

Once-A-Month Cooking

Dump: Chicken and salsa in gallon freezer bag.  Lable and Freeze

Prepare:  Thaw the night before or loose from bag the morning of, and pour in crockpot.

Serving Suggestions

    • Stir in 1/4 cup sour cream to make a creamy salsa mixture.
    • Add cheese and serve on tortillas
    • Stir in a can of black beans and serve over rice
    • Serve as a heavy dip with tortilla chips
