Loaded corn casserole is a new twist on an old favorite holiday casserole. This traditional corn casserole is spiced up by adding bacon bits, cheddar cheese, and onions. Think loaded baked potato, but corn instead of potato.
How do I make loaded corn casserole?
To make a loaded corn casserole, start by melting a stick of butter in the microwave or on the stovetop. Be sure to let the butter cool just a bit before adding the eggs, cornbread mix, sour cream, and cheese. Then stir in the bacon bits and onions while saving some to sprinkle on the top after baking.
After whisking all the ingredients together, pour the mixture into a baking dish coated with cooking spray. For a crispier edge to your casserole, coat the dish with butter.
