I discovered the original recipe on Amy’s blog, and modified it just a bit.  These tasty little treats are yummy, filling and made with organic whole foods.  Yes, you can serve your children cookies for breakfast, guilt free!



Breakfast Cookies Recipe

Ingredients:

1 cup butter, melted
¾ cup honey
2 eggs
1 t. salt
1 t. cinnamon
1 t. baking soda
1 t. vanilla
1 t. almond extract
½ cup yogurt or buttermilk
2 cups whole wheat flour
2 cups whole rolled oats
1 cup mini chocolate chips or raisins

Preparation

Mix butter, honey, eggs, salt, cinnamon, soda, vanilla, almond extract and yogurt. Stir in flour and oats. Fold in raisins or chocolate chips. Scoop heaping tablespoons of dough onto a cookie sheet. Bake at 350 degrees for 15-20 minutes. Allow cookies to cool 3-4 minutes on cookie sheet before removing cookies to cool on a wire rack.

Using a medium scoop, this recipe yields a little over 3 dozen cookies.  This recipe usually leaves my family with cookies for a treat later and even some for the next day.

Breakfast Cookies

Easy whole grain and whole foods breakfast cookies.

Ingredients

Wet Ingredients

  • 1 cup butter melted
  • 3/4 cup honey
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp almond extract
  • 1/2 cup yogurt or buttermilk

Dry Ingredients

  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 2 cups whole wheat flour

Fold In Ingredients

  • 2 cups rolled oats
  • 1 cup mini chocolate chips or raisins

Instructions

  1. Combine wet ingredients in large mixing bowl.  Mix dry ingredients in separate bowl.  Combine wet and dry ingredients in larger bowl.  Fold in oats and raisins.  



Tip

Make this mixture in bulk.  Scoop out onto metal cookie sheet and flash freeze.  Pack frozen balls by the dozen or 2 dozen into gallon size freezer bags.  Lay out a bag the night before you want to serve them for breakfast.
