Simple Crustless Quiche

Since our sweet Phoebe came into our life, our routines have changed drastically.  My husband is now the adult in charge of breakfast, and I am usually already out of the house at one of Phoebe’s therapy appointments.   With that in mind, I schedule as many make ahead or once-a-month cooking breakfasts as possible to simplify things for my husband.

Crustless Quiche is one of our staple breakfast meals.  It can be made with sausage or a cheaper meatless version can be made with spinach.  In fact, you can vary the recipe however you like.

Simple Crustless Quiche Recipe

Ingredients

1 lb sausage

6 eggs

8 oz cheddar cheese

16 oz cottage cheese

 

Preparation

Brown sausage.  Combine browned sausage and all other ingredients and mix well.  Pour into greased 8×8 baking dish and bake 30-45 minutes or until center is firm and edges begin to brown.  Slice and serve.

 

Once A Month Cooking Instructions

  1. Determine the number of quiche you want to prepare and multiply the ingredients.
  2. Once all sausage is browned, combine all ingredients into a large pot.
  3. Dip out equal amounts into prepared freezer bags.
  4. Freeze flat.

Lay bags of quiche out the night before cooking so they have time to thaw.  Pour out of bag into greased dish and bake.

We use lots of freezer bags.  These without the zipper are best for “dump” recipes.
