The important part of this recipe is to maintain the protein content from the yogurt and the protein powder.

As long as you choose a protein powder with the desired amount and type of protein you need, you can choose any flavor to change to taste of the muffins.

How to make greek yogurt protein powder muffins

Follow these simple steps to have enough of these super healthy muffins to meal prep for the week or a quick and easy breakfast for your family.

  • First, gather your ingredients and preheat oven to 350 degrees F. Spray regular sized muffin tin (I actually prefer to use a mini muffin tin) with non-stick cooking spray or line 12 muffin tins with silicone liners.
  • Place 1 cup of oats in a blender and blend until you have oat flour
  • In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon.
  • In a medium bowl, whisk together the oil, brown sugar, eggs, vanilla extract and Greek yogurt.
  • Stir the wet ingredients into the dry ingredients until the mixture is well combined.
  • Fold in 1 cup chocolate chips.
  • Divide batter evenly among greased muffin tins, filling each one almost full.
  • Bake for 15-18 minutes, or until an inserted toothpick comes out clean. They should be slightly firm to the touch and lightly golden in some places. Let the muffins cool for several minutes before removing them from the tin.

These muffins are so high in protein that they make the perfect school morning breakfast for when you are running late!

Recipe Substitutions

  • Use ripe bananas instead of oil
  • Use whole wheat flour instead of making oat flour
