- First, gather your ingredients and preheat oven to 350 degrees F. Spray regular sized muffin tin (I actually prefer to use a mini muffin tin) with non-stick cooking spray or line 12 muffin tins with silicone liners.
- Place 1 cup of oats in a blender and blend until you have oat flour
- In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt and cinnamon.
- In a medium bowl, whisk together the oil, brown sugar, eggs, vanilla extract and Greek yogurt.
- Stir the wet ingredients into the dry ingredients until the mixture is well combined.
- Fold in 1 cup chocolate chips.
- Divide batter evenly among greased muffin tins, filling each one almost full.
- Bake for 15-18 minutes, or until an inserted toothpick comes out clean. They should be slightly firm to the touch and lightly golden in some places. Let the muffins cool for several minutes before removing them from the tin.
