Easy Pizza Casserole

This pizza casserole is one of our go-to meals.  It can be made in bulk and frozen to pull out for dinner and it is great for potlucks.

I have no idea where this recipe originally came from.  It was given to me by my original once a month cooking crew and it has been a family meal staple ever since.  It is even included in our month of casseroles menu plan.

When we discovered that our son was sensitive to gluten, we modified the recipe and kept it in our regular meal list.

Easy Pizza Casserole Recipe

Ingredients

2 lbs ground beef

1 tsp minced garlic

1 tsp Italian seasoning

2 large jars spaghetti sauce (about 52 ounces)

16 oz rotini pasta

20 oz mozzarella cheese

8 oz sliced pepperoni




Directions

Brown ground beef and drain.  Mix garlic and Italian Seasoning into beef.  Boil rotini noodles to soft but still firm.  Drain noodles and mix in beef and spaghetti sauce and 3/4 of the cheese.  Pour mixture into 9×13 baking dish.  Sprinkle remaining cheese on top.  Layer pepperoni on top.  Cover and bake at 425 until heated through and cheese is melted.

Tips

Multiply the recipe x10 or x5 for once a month cooking.

Thaw in the morning to take to an evening potluck.

Exchange regular rotini noodles for a gluten free variety and choose a gluten free sauce to make this meal gluten free.  These GF noodles freeze well in the casserole.
