Black Beans and Rice Make Ahead Wrap Filling

Loaded Black Beans and Rice Make Ahead Wrap Filling

I love recipes that are versatile and can be served year round, that also provide great nutritional value. It’s an extra bonus when those same recipes are meatless meals, inexpensive, and easy to prepare. This black beans and rice wrap filling meets all of those criteria!  This meal can also be prepared completely oven free.

First cook two pounds of brown rice. We really like the flavor of basmati rice. To save time, I use either my rice cooker or an instant pot to cook the rice. Increase the quantity for a larger batch of loaded beans and rice.

Once your rice is cooked, rinse four cans of black beans and toss gently into the rice.

Can I use dried black beans?

We usually use dried black beans that we have cooked over night in the slow cooker for this recipe. Typically, we cook two pounds of black beans at a time. This makes it easy to make enough of this recipe to serve and have plenty to freeze.

Next, mix in two cans of whole kernel corn. You can also use frozen corn but remember to allow the corn to thaw before adding it to the mixture if you intent to serve it immediately.

Mix in two cups of mexican blend shredded cheese. Then finally add two packets of taco seasoning mix or four table spoons of your own taco seasoning recipe. Be sure to coat the mixture well with the taco seasoning.

Seal the entire mixture in a large bowl and chill in the refrigerator for several hours.

How do I serve Loaded Black Beans and Rice Warm?

To serve this mixture warm, I add two tablespoons of oil to a large skillet or use my electric skillet if I am feeding a crowd. Simply toss the mixture in the skillet until it is warmed through. Sometimes I will even add a little bit of enchilada sauce or a can of rotel at this point to spice up the mix.

Serve warm with tortillas or tortilla chips. I usually keep some extra cheese handy for those in my house who really like cheese.

Can you bake the Black Beans and Rice Mixture?

Transfer mixture into a 9×13 pan.  Sprinkle some extra cheese over the top if you like.  Bake on 400 until heated through and serve.

Can this mixture be served cold?

Refrigerate mixture and serve cold on tortillas or with tortilla chips. I use this mixture for a healthy lunch when we take a homeschool field trip or any time we need to take a lunch away from home. As long as it has been refrigerated or frozen, it will keep well until lunch without being in a cooler.

Can you freeze black beans and rice?

This recipe is one that I make in bulk and freeze. Multiply the recipe as you need to make as much as you like.

Spoon mixture into quart size freezer bags.  Freeze bags.  Take bags out of freezer on the day you want to use them for lunch.  Pack them in a cooler bag with other items you want to keep cool.  By lunchtime, the mixture in the bags will be thawed to eat and the other items in the bag will still be cool.  Mixture can be eaten from the bags with a spoon or spooned onto tortillas for a healthy poolside lunch.
